Our Winter CSA is meant to provide you with nutritious and delicious sustenance during what are typically the coldest months of the year, January & February. A share includes 6-8 types of produce including fresh, stored, dried and frozen products. All are certified organic and grown on our farm except the potatoes from Strohauer Farms in LaSalle, Colorado.
Fresh produce will primarily be microgreens and shoots initially with other greens in February, weather permitting. Stored produce includes cabbage, beets, carrots, onions, leeks, parsnips, celeriac, potatoes and winter squash. Dried produce is dried beans and various types of dried peppers. Frozen includes our vine-ripened tomatoes for cooking and frozen roasted peppers. I will try to include a mix of the above types of produce each week, attempting to balance nutritionally and in a way that makes sense for meals.
Recipes, storage and preparation tips are offered in the form of an E-newsletter. Pick up is at the farm on Saturdays, beginning January 6th and running through February, from 10-2 PM except by prior arrangement. During our Colorado winter, the possibility of adverse weather affecting pick up is always a possibility. Should we need to postpone a pickup, we would extend by a week or make arrangements for pick up another day.
