Production of greens for this week is plentiful and includes kale, chard, mild and beautiful mustard greens, arugula, bok choy and BPF special blend as well as radishes. Mustard greens and BPF special blend are especially plentiful right now. The mustard greens are delicious with our heirloom soup bean mix. The kale is classic with our cannellini beans. The heirloom Italian chard thrives in the cold and its thicker leaves are sweet and tender, the stems succulent. It is wonderful in soups as well as for saute. Or, pair it with the wonderful Yukon Gold potatoes from Strohauer’s. All of the greens are good with eggs as in scrambled, omelets or frittatas. We are well-supplied with our other winter vegetables, apples and dried beans, fresh eggs from Sweet Pickle Farms and delicious grass-fed beef from Heartsong Farm.
